For the non-French speaker, I will translate his famous chocolate cake recipe. Is it actually possible to have a healthy chocolate cake? Thank God, YES!
If you are looking for a way to keep your healthy lifestyle on track and combine it with pleasure without feeling guilty, don’t look further. Here is the greatest chocolate cake without using butter and sugar! How is it possible? Just follow the instructions below:
Ingredients:
The surprising secret ingredient to replace butter is:
- 200g of finely grated courgette (also called zucchini) - equivalent of 1 whole big courgette or 2 small ones)
It works wonders! This versatile veggie will replace butter.
It will not only add texture but also moisture to your chocolate cake without anyone suspecting it!
The finely grated courgette will blend perfectly with the batter and will remain completely tasteless.
The perfect secret weapon for a healthy treat!
Moving on, we will also need:
- 20g of unsweetened cacao powder
- 200g of dark chocolate (preferably 70% or higher as they contain a higher amount of cacao (packed with antioxidants) and is lower in sugar)
- 30g of cornstarch or flour – or to try one day: oat flour for another healthy gluten-free cake option.
- 40g of stevia or honey (if you don’t have any of these substitutes, that will be 80g of sugar).
- 4 eggs.
- a bit of vanilla extract.
Instructions:

Melt the dark chocolate in the microwave or in a bain-marie and let it cool down.

In the meantime, peel the courgette and finely grate it without draining the juice that came out of it.

Add and mix the egg yolks, the stevia or honey, and the vanilla extract.

Add the cacao powder to the egg yolk mixture. Then pour the courgette juice and 1 or 2 tablespoons of the grated courgette.

Then add the cornstarch and the melted dark chocolate (Optional: you can keep 3 tablespoons of melted chocolate aside to garnish the cake at the end of the recipe)

Add the remaining courgette.

Beat the egg white until firm. Try to keep the airy texture from the egg white by incorporating it gently into the batter.

Transfer the mixture to a non-stick mold and bake it for 25-30min at 180°C.

Check if the cake is baked through (if your knife comes out clean, you are all good to go).

Let it cool down and add the remaining of the melted chocolate on top of the chocolate cake if you want an extra chocolate glaze.
